What's for Dinner: St. Patty's Day Potluck

Well, this is a bit late for this recipe - and we technically didn't have it for dinner - but I'm going to share because I thought it was yummy and it got Macario's approval, so here it goes. This is a recipe for the Potato and Asparagus Bake I made for my office potluck last week (we had our potluck the Monday after St. Patty's Day):

Macario even made an appearance at the potluck to enjoy some of the yummy food, including our dish!

He actually really enjoyed this meal and I liked that there were green veggies hidden in the mashed potatoes. I'll definitely be making it for him again.
